Dry Ingredients

405gall-purpose plain flour

250ggranulated sugar

1 tablespoonbaking powder

½ teaspoonbaking soda

½ teaspoonground cinnamon

¼ teaspoonsalt

1 heaped dessertspooncocoa powder

Instructions
Step 1
Preheat the oven to 180°C if not using an air fryer (I’ve never preheated the air fryer for this recipe and they turned out fine!)
For the batter
Step 2
Add all the dry ingredients (except the cocoa powder) to a large mixing bowl and whisk until there are no lumps.
Step 3
Add all of the wet ingredients (except the chocolate chips) and mix until just combined. Some lumps are fine, as long as there aren't lumps of flour.
Step 4
Add most of the chocolate chips (reserve around ¼ for sprinkling) and fold until just combined.
Step 5
Separate a 1/3 of the batter into another bowl and stir in cocoa powder until there are no big lumps but try not to over mix
Step 6
Alternate taking a spoon from the cocoa batter and original batter and putting it into muffin cases until the muffin case is nearly full.
Step 7
Once the case is full use a toothpick to swirl the batter around in the case to achieve that marbled effect!
Step 8
Sprinkle the remaining chocolate chips on top.
Step 9
Bake the muffins for 22-30 minutes (fan oven) 15-20 mins (air fryer) or until you can insert a toothpick in a muffin and it comes out mostly clean. Your toothpick should have some crumbs and melted chocolate on it but no wet batter. Don't overbake the muffins otherwise they'll be dry.
