Peach & Blueberry Baked Oats
This one is such a hit for our family! Grab some fresh {and in season} blueberries and peaches at the farmers market and breakfast is served. 🫐🍑
Ingredients:
2 cups rolled oats (we love sprouted)
2 cups milk (or unsweetened almond milk)
1 cup fresh blueberries
1-2 peaches
1 egg
1/4 cup maple syrup
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
1 tsp vanilla extract
Then…
Preheat oven to 350 and cut up the peaches and rinse the blueberries. Mix all of your dry ingredients in a 13x9 oven safe baking dish.
Crack the egg into the baking dish and pour in the milk, maple syrup, and vanilla extract. Mix everything together with a fork. Mix in the peaches and blueberries! Make in the oven for 20-25 minutes.
