180gall-purpose flour

1 Tbspcorn starch

1 Tbspgranulated sugar

¼ tspsalt

2 Tbspneutral oil

240mlsoy milk

230mlwater

1 tspvanilla extract

Instructions
Step 1
In a blender, add all the ingredients except for the butter and blend until silky. The order of the ingredients does not matter.

Step 2
If using a bowl, whisk together the flour, cornstarch, sugar, and salt. Now add the oil, soy milk, water, and vanilla extract. Whisk well until smooth and well combined.


Step 3
Allow batter to rest while the pan heats up.

Step 4
Heat up a non-stick pan on medium low heat. Add butter and about ⅓ cup of batter or 3 small ladles. Swirl the batter around the pan until a thin circle forms.
Step 5
Cook until the top looks fairly dry, and the edges look lightly golden; about 2 minutes. Using a spatula, carefully flip the crepe over and cook for 30 seconds on the other side. Remove from pan and repeat with the rest of the batter.
