Instructions
Step 1
Preheat oven to 325* F. -- Convection oven to 275* F.
Step 2
CCP--Wash & sanitize hands & prep area. Wear gloves & discard per facility HACCP guidelines.
Step 3
CCP: Thaw frozen liquid pasteurized eggs in refrigerator overnight on bottom shelf. Label with date when removed from freezer.
Step 4
1. Place cubed bread and shredded cheese in a large bowl and mix gently to combine. Transfer mixture to steamtable pan sprayed with nonstick cooking spray.
Step 5
2. Combine eggs, milk, salt, mustard, and tabasco sauce. Pour over bread mixture. Sprinkle evenly with paprika.
Step 6
3. Place steamtable pan in another larger pan. Add enough water to outer pan for it to come up 1/4 of the way up the side of the inner pan.
Step 7
4. Bake uncovered 1 - 1-1/2 hours or until strata sets, and desired internal temperature is reached.
Step 8
CCP: Final internal cooking temperature 155°F or above for 17 seconds.
Step 9
CCP: Maintain holding 135°F or above.
Step 10
Cut each 12 x 20 x 2” pan 4 x 6 for 24 servings. Each serving = approx. 3” x 3 “.
Step 11
Discard leftovers.
