Step 1
Pat chicken dry and cut into cubes
Step 2
Add olive oil to a large skillet over medium-high heat
Step 3
Once pan is hot, add chicken and cook for 2-3 mins until edges start to cook
Step 4
Add sun dried tomatoes, garlic, Italian seasonin, paprika, salt and black pepper.
Step 5
Cook 3-4 mins more then add orzo and broth and stir well.
Step 6
Reduce heat to medium
Step 7
Cover skillet and cook for 12 mins, removing cover every few minutes to stir and ensure nothing sticks to bottom.
Step 8
Check orzo is cooked through (may need a little longer) and once cooked, add in the coconut milk and spinach.
Step 9
Stir well for another minute until the spinach is wilted then add in the parmesan cheese and stir again.
Step 10
Remove from heat and serve.
