For the dough,
1 cupall purpose flour
1 cupchicken broth
or vegetable broth
1 Tbspbutter
¼ tsponion powder
¼ tspgarlic powder
¼ tspblack pepper
¼ tspsalt

Prep the dough,
Step 1
In a skillet, bring your choice of broth and butter to a boil.

Season with garlic powder, onion powder, black pepper and salt. This will be your only source of flavor so make sure your broth tastes good!

Step 3
Reduce the heat to medium low and gradually stir in the flour. Keep stirring until a dough forms and pulls away from the sides of the pan.

Remove the dough from the heat and let it cool before kneading it for a few minutes. Knead the dough until it is smooth. Set aside. You can make this dough 24 hours ahead of time if needed.
Prep the filling,

Cut mozzarella into small cubes.

Shaping the coxinhas,

Take a small portion of the dough and flatten it with your hand.

Place a mozzarella cheese cube in the center of the dough.

Enclose the cheese with the dough, shaping it into a teardrop or sphere shape. Make sure you seal the edges very well or else the cheese will escape.

In two separate dishes, fill one with water (or egg wash) and the other with the breadcrumbs. Season your breadcrumbs with garlic powder, onion powder, salt and pepper.

Dip each coxinha into water (or egg wash) and then roll it gently in breadcrumbs, ensuring that it is well coated.
Fry the coxinhas,

Heat oil in a deep skillet to 350F.
Step 12
Carefully drop the coxinhas into the hot oil and fry until golden brown and crispy. This will take about 5 minutes.

Remove the coxinhas from the hot oil and place them on paper towels to drain excess oil.
Step 14
Enjoy them while they’re hot and fresh! If you need to reheat them, you can air fry them at 375 for 3-4 minutes and they will come out crispy!
