Step 1
Rip tofu into 1-2” pieces and squeeze out water (freeze and thaw to get the most out but not necessary). Coat on cork starch then mix in 2 eggs to coat. Fry in some oil in a sauté pan until golden and batter is cooked. Drain. Mix remaining ingredients together and pour everything into a greased baking dish, mix to cost. Bake at 375°F until sauce thickens approx 20 minutes turning once. Serve over rice.

Kid-friendly
Loved every bite. Served with fried rice otherwise would have incorporated onions and pineapple (for the adults). Used a cast iron so one pan meal. 10/10 for sure. Finally got the family to eat tofu. :)
