Saute onions in oil. Put in tom paste and brown. Put in garlic. Put in beef on top. Put covered dutch oven in 325 ° oven for 1-1.5 hour.
Step 9
Remove beef from pot, try not to get the onions with it. Strain liquid and press solids and scrape bottom of strainer. Put liquid back in pot. Put in wine (dry red). Reduce liquid. Put 2 Tbsp COLD butter one at a time and whisk to emulsify.
