Pesto Cream Fried Eggs

I bet you've never had eggs like these! Eggs fried in heavy cream! This process creates caramelized eggs that are luscious and creamy. You can flavor the heavy cream with any herbs of your choice but I chose to use heavy cream. Top with parmesan cheese for a final touch and you'll have one of the best egg dishes ever.

Instructions
Step 1
Heat a large pan over medium low heat. Add in the pesto and pour the heavy cream into the pan, stir well to combine. The heavy cream should create a thin layer over the bottom of your pan.
Step 2
Once the heavy cream starts to simmer, let it simmer until the cream slightly caramelizes (2-3 mins) and then carefully crack in your eggs. Cover and allow them to cook undisturbed for a few minutes until the egg whites begin to set but the yolks remain runny or until your desired level of doneness.
Step 3
Once cooked to your preference, season with black pepper, salt and grated parmesan cheese.
Step 4
Carefully transfer them to your serving dish and enjoy while hot, accompanied by toast or your favorite breakfast sides.
