This is springtime on toast 🌿🍋. Grilled sourdough topped with creamy burrata, charred asparagus, zingy preserved lemons and chopped pistachios. It's bright, flavourful and full of texture - the perfect combo to jazz up your toast game!

Step 1
Drizzle your frying pan with a bit of extra virgin olive oil - lightly coat the bread and asparagus in the oil from the pan. Cook over a medium high heat until desired colour on toast is achieved and the asparagus is tender and starting to char. Season the asparagus with salt and pepper if you desire.
Step 2
While the toast and asparagus are cooking, slice the preserved lemon (taking care to remove all seeds) and chop the pistachios.
Step 3
When they’re finished cooking, slice the asparagus spears lengthways.
Step 4
Top the grilled toast with the burrata cheese, asparagus and preserved lemon slices. Sprinkle with pistachios, drizzle with a bit of olive oil and finish with a bit of flaky sea salt and lemon zest. Enjoy!
