Chicken Parmesan

This Easy, cheesy and comforting chicken parm is a family favorite. I made it for dinner last night and served it over pasta. I did take a short cut by using store bought marinara sauce (Rao’s) is a favorite, it tastes just like homemade.

Instructions

Step 1
1. Cut chicken breasts horizontally to make 6 fillets. Cover the chicken with plastic wrap and pound chicken with the smooth side of a meat mallet slightly until all even.

2. Seasoned the chicken on both side with salt and pepper.
Step 3
3. In a bowl cracked 3 eggs and whisk. In another bowl combine together the bread crumbs, Parmesan cheese, Italian herbs, garlic powder and black pepper.
Step 4
4. Dip the chicken into the beaten eggs. Transfer breast to the bread crumb mixture, pressing crumbs into both sides. Repeat for each chicken breast.
Step 5
5. Put a skillet on medium-high heat. Add in oil and let oil heat up. Cook chicken in the hot oil until golden, about 2 minutes per side.
Step 6
6. Transfer chicken to a baking dish. Top each chicken breast with 2 heaping tablespoons of tomato sauce. Layer each chicken breast with equal amounts of mozzarella cheese.
Step 7
7. Bake in a preheated 425° F oven for about 15 minutes until the cheese has melted. Garnish with parsley or basil serve over pasta and enjoy!
