Step 1
In a large mixing bowl, cream together the softened butter and cream cheese until light and fluffy.

* Add the sugar, egg, and vanilla extract to the creamed mixture, and mix until well combined.

* Add the flour, baking powder, and salt, mixing until just combined. Chill the dough for at least 15 minutes.

* Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

* Place the crushed graham crackers in a shallow dish.

* Use a spoon to scoop out portions of dough and roll them into balls, then coat them in the crushed graham crackers.

* Place the coated dough balls onto the prepared baking sheets, leaving space between each one.

* Use your thumb or the back of a spoon to create a small indentation in the center of each dough ball.
Step 9
* Bake for 10-12 minutes, or until the edges are lightly golden.

* Allow the cookies to cool on the baking sheets for a few minutes before adding the filling.
