Cinnamon swirl banana bread
a forever favorite 😍
preheat oven to 350º
in a large bowl mix:
3 super ripe bananas (mashed)
1/3 cup olive oil
2 eggs
1/3 cup maple syrup
1/3 cup white sugar
in another bowl mix:
2 cups all purpose flour
1/2 tsp salt
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp cinnamon
slowly fold dry ingredients into wet mixture
in a small bowl, mix 1/2 cup white sugar with 1 tbsp cinnamon
line a loaf pan with parchment paper. pour 1/3 of the batter in, then sprinkle with 2 tbsp of the cinnamon sugar mixture add another 1/3 of batter and another 2 tbsp of cinnamon sugar. top with the remaining batter and a bit more cinnamon sugar. bake for 50-55 minutes, or until a toothpick comes out clean
