Instructions
Step 1
Heat 1/2 t oil in a large non stick skillet. Slice sausage into 1/2 inch pieces. Brown sausages. Remove from pan.
Step 2
Add the remaining 1/2 t olive oil to skillet. Sauté bell pepper and onion until softened.
Step 3
Add fennel seeds, Italian seasoning, red pepper, garlic and tomato paste. Sauté for 1-2 minutes, stirring constantly.
Step 4
Add diced tomato and broth and season with salt and pepper. Add sausage back to skillet and cook for about 5 min until sauce thickens.
Step 5
Add chopped green onion for garnish. Serve over cauliflower rice.
