This is a Favorite traditional Irish Recipe of mine . It’s so fluffy and full of flavor everyone loves it and there are never any leftovers

Instructions
Step 1
Peel chop and boil or steam potatoes until fork tender .

While the potatoes are cooking chop the kale into little pieces remove the woody stems then add them to a pan with 2 tbsp of the butter and sauté 5 minutes on medium high heat . Add the white parts of the spring onions reserving the green tops for the garnish and cook for another two minutes . Season with salt and white pepper then set aside

Step 3
Heat milk in a pan just to warm it up then strain the potatoes and add in two more tbsp of butter with salt and white pepper to taste . Mash it up then add the milk a little bit at a time to make it creamy .I like to use a whisk to fluff it up .

Add in the sautéed kale and spring onions then garnish with the green tops and serve . Optionally you can also add some crispy bacon bits as it does go really well with the cabbage and mash . Enjoy
