Challah Dough
Strawberry Matcha Filling
8 ozcream cheese
1 Tbspstrawberry matcha drink mix
organic
½ cuppowdered sugar
1egg yolk
vanilla
4strawberries
diced
Instructions
Step 1
Add all of the ingredients to the bread machine basket in the order they are listed. Start with just 3.5 cups of flour. Put bread machine on the dough settings, and watch it form a dough ball. **Continue to add flour until the dough is firm and not sticky to touch (could be up to another cup of flour for a total of 4-4.5 cups). Close the machine lid & let it continue on the dough cycle.
Step 2
Once the dough cycle is complete the dough ball should have risen and at least doubled in size. Punch the dough down. Remove the dough from the basket, and place on a floured surface then divide into two.
Step 3
Roll each half out into a 1/4" thick rectangle. Mix together cheesecake filling ingredients until smooth. Spread an even layer of the filling onto each half of dough, sprinkle the diced strawberries on top, then roll it up. Slice down the middle lengthwise, and twist the two halves together.
Step 4
Place the babkas in greased baking dishes, cover with a damp cloth and let proof for another hour or until it doubles in size.
Step 5
Mix together the remaining egg white + 1 tbsp water, and brush over the babka before baking. Bake at 350F for 35-45 minutes. Sometimes it is hard to know if your babka has finished baking, but an easy way to make sure is to use a food thermometer to check the internal temp: if it is 185-190F, then the babka is done! Let the Babka cool to room temperature before removing from baking dish and slicing.
