Instructions
Step 1
Preheat oven to 180°C. Boil or steam sweet potato until soft. In the meantime, heat olive oil, curry powder, paprika and mixed spice in a small pot. Add onion and sautè until soft.
Step 2
Add carrots, lentils, tomato paste and tinned tomato to the pot and simmer for 10 minutes. If it is too thick, add a splash of water. Place the lentil mixture into an oven-proof dish.
Step 3
Add milk, salt and pepper to the cooked sweet potato and mash until smooth. Spread mash over the lentils, sprinkle parmesan over the top and bake for 40 minutes until golden on top. Serve with a side salad.
