Roast pumpkin & feta gnocchi bake

Instructions

Step 1
1. Preheat oven to 180ยฐ and dice pumpkin 2. Place pumpkin, feta, oil & seasonings in a large baking try & roast for 30-40 minutes until pumpkin is soft & feta is golden brown 3. Cook gnocchi according to instructions reserving 1/2 cup pasta water 4. Drain gnocchi and add to baking dish with parmesan & mix well to combine 5. Place back in oven for 10 minutes until golden
