pepper orzo one pot meal

Instructions
Step 1
Dice the peppers and shallot, mince the garlic.
Step 2
In a hot pan, fry shallots in olive oil for 5 minutes until soft.
Step 3
Add peppers and cook for another 5 minutes before adding the garlic.
Step 4
Cook for another 5 minutes and then stir in orzo, chickpeas and tomatoes.
Step 5
Top up with veg stock and let simmer, stirring constantly as it likes to stick to the bottom, for about 15 minutes or until the orzo is tender.
Step 6
Once tender, add the spinach and stir through the orzo until wilted. Serve hot
