Made with a whipped pastry made to perfection, these pastries are crunchy on the outside and melt in your mouth at the first bite. Instructions
Step 1
Cut butter into pieces and add to a large bowl with the sugar and salt.

Add the vanilla and lemon zest. Beat well with a mixer.

Once the eggs are mixed completely, add the rest of the flour and mix well. Add the dough into a pastry bag with a 12 mm star nozzle.
Step 6
Shape the biscuits into an s shape on a lined baking sheet. Then let the cookies rest in the fridge for 5 minutes. Bake at 345 for 15 minutes.
Step 7
Chop the chocolate if needed and put 260 g of it into a bowl and 40 g into another. When the cookies are golden and done let them cool completely.
Step 8
Melt the chocolate until it reaches 113 degrees. The chocolate can be melted in a bain marie or the microwave. When it reaches 113 degrees. Add the 40 g of the chocolate.
Step 9
Mix the chocolate vigorously until it reaches 86 degrees. Dip one side of the cookies into the chocolate. To get rid of excess chocolate on the cookies, wipe them on the edge of the bowl.
Step 10
Place them on a wire rack and allow to cool completely.
