Matcha Cookies with Macadamia Nuts and White Chocolate

These cookies are thick, chewy, crispy and oh so delicious! If you prefer a stronger matcha flavor, add 2 tablespoons of matcha powder instead of 1.

Instructions

Step 1
In a large mixing bowl, cream together butter and sugars with a hand mixer until light and fluffy, about 4 minutes. You can also use a stand mixer with paddle attachment. Add eggs, one at a time, mixing until incorporated. Add vanilla with second egg.
Step 2
In a medium bowl, combine flour, baking soda, salt, cornstarch and matcha powder.
Step 3
Add half of the dry mixture to the wet mix and beat on low until incorporated. Repeat with second half. Be careful not to over-mix! Fold in macadamia nuts and white chocolate.
Step 4
Line two baking sheets with parchment paper. Use a large cookie scoop to drop the dough onto a baking sheet. If you don’t have a scoop, make each cookie 3 tablespoons. Refrigerate for at least 30 minutes.
Step 5
Preheat oven to 375 degrees. Separate cookies between the two baking sheets and gently press down halfway. Bake, one sheet at a time, for 12-15 minutes. Let cool for at least 10 minutes.
