For the soup
Instructions
Step 1
Heat oil in a large pan,stir in spring onions cook for 5 mins until just starting to soften. Stir in flour and cook for 1 minute. Gradually mix in stock and bring to boil stirring.(don't worry if lumpy.
Step 2
Add asparagus and simmer for 5 mins until just tender. Lift out 16 asparagus and set aside
Step 3
Blend rest of the soup ingredients until smooth.
Step 4
Return soup to heat. Mix in 100grms of creme fraiche, 1/2 lemon zest and plenty of seasoning
Step 5
In a small bowl add the rest of the creme fraiche and lemon juice
Step 6
Garnish with asparagus and dill
