Step 1
In a large bowl, add the cornmeal and salt and slowly add water until the dough sticks to itself. Let it hydrate for at least 15 minutes.
Step 2
You can used canned refried beans for the filling, but if you feel like making it yourself - chop an onion and a couple garlic cloves and place them in a pan with some oil. Add some canned black or kidney beans and 1tsp of cumin and chili powder. Cook for 15-20 minutes and mash with a potato masher (add some water for consistency)
Step 3
To make the sauce place all of the ingredients in a blender and blend until smooth. Move to a pot on medium heat and cook some of the water off until somewhat thick.
Step 4
Shred some cabbage, red onion and carrot and place them in a bowl. Add the vinegar, salt and oregano, mix and let sit for 10 or 15 minutes
Step 5
Now with the hydrated dough make a circular shape with your hands. Fill that with the beans and mozzarella and use some more of the dough to cover. Fry in a pan for 3-4 minutes on each side until golden and cooked through. Serve with the topping and sauce on the side!
