CHOCOLATE & PEANUT BUTTER SILKEN TOFU MOUSSE 🤎
This pud has been a family fave since the avocado chocolate mousse craze (iykyk!) and it really is SO GOOD. If you’re a tofu sceptic, please don’t let using it in this put you off. The tofu is completely flavourless and basically just turns to a high protein cream when blended and perfectly carries the gorgeous nutty chocolate flavours 🫡
Serves 3-4.
▫️1 pack silken tofu (300g)
▫️1 tbsp maple syrup
▫️1 tbsp natural peanut butter
▫️1 tbsp cacao powder
▫️100g dark chocolate, melted and cooled slightly
▫️Optional toppings: Greek style yoghurt, chopped peanuts, grated dark chocolate
Add all ingredients into a blender and blend until completely smooth.
Divide the mixture into cocktail glasses, or small bowls, and place in the fridge to set for 2+ hours. The longer you leave it, the thicker and (in my opinion) more decadent it will be!
Before serving, top with yoghurt, chopped nuts and grated chocolate.
