STRAWBERRY-BLACK PEPPER BUTTERMILK SPINACH SALAD
The classic strawberry spinach salad makes a big appearance in my house in spring. I actually count down the days until we can pick fresh strawberries- there is nothing better! The strawberries we pick are so sweet that they could be dessert all by themselves, and I'm definitely not a person who usually considers fruit to be dessert.
To give this salad a special twist, drizzle on the black pepper buttermilk dressing. It's so creamy and tangy. In fact it's SO good that sometimes | use it as a dip for any fresh fruit.
This salad is crunchy and fresh. You can swap out the greens based on what you have, but the other ingredients are pretty standard: strawberries, avocado, and shallot. It's a tradition here and a great one to bring to a picnic or party.

Ingredients

12 ouncesbaby spinach
8 ouncesstrawberries
sliced
2avocados
thinly sliced
1shallot
thinly sliced
kosher salt
black pepper
Buttermilk Dressing
Instructions
Step 1
• The dressing can be made ahead of time and stored in the fridge for 2-3 days.
Step 2
In a blender or food processor, combine the strawberries, buttermilk, chives, yogurt, olive oil, vinegar, pepper, and salt.
Step 3
Blend until smooth and creamy.
Step 4
In a large bowl, combine the spinach, strawberries, avocado, and shallot and toss with salt and pepper. Drizzle with the dressing and serve.
