Instructions
Step 1
Make your sauce about 24 hours in advance by combining the dijon mustard, mayonnaise, honey, and lemon juice. Reserve half in the fridge for dipping. Marinate your chicken breats in the rest for the next 24 hours.
Step 2
Cook bacon until slightly crisp. Set aside. Sautee mushrooms in the same pan with the melted butter, and season with salt and pepper. Cook until tender. Remove from pan and set aside.
Step 3
Sear the chicken in the pan until a nice crust is on it, about 3 - 4 minutes on each side. Remove from heat and place in an oven-safe pan.
Step 4
Top with sautéed mushrooms. Cut the bacon strips in half, and lay criss-crossed on top of the mushrooms. Next, cover generously with shredded colby jack. Bake at 400° F for 10 - 15 minutes or until it temps at 165° F.
Step 5
Serve with the remaining dipping sauce on the side and enjoy!
