Ingredients

Marinade
¾ cupolive oil
¼ cupwhite wine vinegar
or red wine vinegar
1 tspsalt
1 tsppepper
2 tspgarlic powder
½ tspred pepper flakes
2 tspbasil
2 tsporegano

Instructions
Step 1
Mix the marinade together in a ziploc bag, add the chicken. Close the bag, give it a good shake and refrigerate 3 minutes up to 24 hours.
Step 2
Preheat oven to 350°F.
Step 3
Place the chicken on a sheet pan. Discard the marinade. Add the tomatoes with the chicken.
Step 4
Bake 20-30 minutes until the tomatoes are roasted and the chicken is cooked through.
Step 5
Turn on the broiler.
Step 6
Add mozzarella cheese to each chicken breast, broil until the cheese is melted. Don’t let all away, the broiler can burn the chicken very fast.
Step 7
Serve the chicken with the tomatoes on top. Drizzle with balsamic glaze and chopped fresh parsley or basil.
Step 8
Serve with a salad, pasta or rice.
