Step 1
Position the rack to the middle of your oven and preheat to 350°F.
Step 2
Butter the insides of two 6" cake pans and line the bottoms with a circle of parchment paper. Dust a very light coating of flour around the sides of the pans.
Step 3
To a large mixing bowl, whisk together your cake mix, flour, sugar, and baking powder for about 30 seconds. (In a stand mixer, just use the paddle attachment on low)
Step 4
To that same bowl, add the rest of your the buttermilk, oil, egg whites, and vanilla.
Step 5
Mix to combine for a couple seconds, then mix for another 2 minutes. (On a stand mixer, do this on medium speed.)
Step 6
I use a timer. You don't want to undermix, because that won't distribute the softened texture coming from the box mix. Alternatively, overmixing will cause your cake to rise too high, then deflate when you take it out of the over.
Step 7
The gist of it is to just mix everything for about 2 minutes. )

Evenly distribute the batter into the prepared pans.
Step 9
Bake for about 23-28 mins. (Start checking at 20 mins.) You can bake each layer individually, or both at once if you have two pans.
Step 10
Move the pans to a wire rack and allow to cool in the pan.
Step 11
Loosen the edges of the cakes using an offset spatula or butter knife, and flip the cakes out onto a cooling rack so you can peel off the parchment bottom. Make sure they are completely cool before assembling and/or frosting.
