Instructions
Step 1
Brown sausages in a pan, cutting in half in the pan, so they cook through.
Step 2
When sausages are almost cooked, add onions and celery, and cook until just soft.
Step 3
Add carrots, potatoes, garlic and salt and pepper.
Step 4
Add curry powder and stir until fragrant.
Step 5
Add stock and tomatoes and mix well. Allow to simmer.
Step 6
Place mixture in an ovenproof dish and bake at 180C for approximately 10 minutes.
Step 7
Add 1/2 the coconut milk and stir through. Cook for a further 5 minutes. Leave in a hot oven whilst making the rice.
Step 8
Place rice in a pot with the remaining coconut milk, cover with water and cook until rice is soft
