Pickled onions to put on anything! Prep in 5 minutes - ready in 3 days. The perfect topping to put on salads, sandwiches, burgers or to have alongside curries, casseroles. Delicious and crunchy. Stores for a few weeks in the fridge.

Instructions
Step 1
Slice onion and pack into a clean glass jar. Sprinkle in the peppercorns, chilli flakes and place a dried bay leaf inside.
Step 2
Make the brine: add sugar, salt and vinegar into a jug and add warm water. Stir until sugar and salt is dissolved then pour over onions making sure they are fully submerged. Make more brine if there isn't enough liquid. Place lid on and keep in fridge - onions should be ready in 3 days!
