Step 1

Clean and slice mini potato into small bitable pieces, transfer to a big bowl.
Step 2

Season with melted butter, olive oil, salt, black pepper, dried rosemary, fresh thyme, minced garlic and honey. Toss and mix well.
Step 3

Transfer seasoned potato pieces to a baking tray, spread evenly then cover with tin foil. Bake in oven for 30 minutes at 450 °F. Remove tin foil and continue baking for another 25-30 minutes until soft and golden brown.
Step 4

Drizzle with shredded cheese and bake for one minute until cheese is completely melted. Garnish with chopped scallion, serve immediately.
