Instructions

Step 1
Preheat oven to 400. Line a 12 cup muffin pan or spray with cooking spray. In a large bowl whisk dry ingredients. In a small bowl, whisk wet ingredients and zest. Pour wet ingredients into dry and stir with a rubber spatula until combined. Divide batter equally between muffin cups. Bake 15-20 minutes, or until toothpick comes out clean. Cool completely. Store 3 days or freeze 3 months.
