Instructions
Step 1
Preheat oven 350° F. In a small bowl, blend oats, flour, baking soda, baking powder, cinnamon and salt. Set aside.
Step 2
In a standing mixer or large bowl, combine softened butter, vanilla and sugar. Beat until creamy. Add egg. Mix until combined (do not over mix).
Step 3
Slowly add dry ingredients and mix until well incorporated.
Step 4
Fold in cranberries, then pistachios. Scoop and drop 1 TBS portions onto prepared pans.
Step 5
Bake 8-10 minutes until edges begin to brown (center should be gooey). Remove and let cool. Then try not to eat them in one sitting!!!
