Instructions
Step 1
Add some coconut oil or ghee to a pan then toss in the cashews . Toast on a medium heat moving around to get an even color

Step 2
Remove the cashews from the pan or push them to the side of the pan then add a sliced green chili and the coriander seeds . Let these infuse into the oil for a minute

Step 3
Add the coconut into the pan then mix everything together and toast the coconut until golden
Step 4
Add the cooked rice to the pan ( my last posted recipe is to make basmati rice in the microwave in 11 minutes , check it out ) . Season with salt and pepper and serve once hot
