Instructions

Step 1
Mix poolish ingredients and leave in sealed container at room temperature for roughly 24 hours
Step 2
Combine all ingredients (starting with wet) in a Kitchen Aid mixer and mix on setting 4 for 10 minutes
Step 3
Remove and cover mixing bowl with plate or something at room temperature for 30 minutes
Step 4
Do strength building folds (SBF) at 30 minutes, 1 hours, and 1.5 hours
Step 5
Transfer dough onto a floured work surface and use a bench scraper to form into a tight ball. Transfer to parchment and let rise for 1 hour
Step 6
Set oven to Bake at 450F with 8qt Dutch oven inside for 30 minutes

Step 7
Take the Dutch oven out and place parchment bread into the Dutch oven. Score bread, add the lid, and place in the oven for 20 minutes
Step 8
Remove lid and bake additional 25 minutes
Step 9
Once desired browning is reached (more brown = more better) transfer to a wire rack to cool for 1 hour. NO TOUCH
