Step 1
Combine crushed graham crackers, melted butter, and sugar; press into the base of mini tart pans.
Bake at 350°F (175°C) for 5-7 minutes. Allow to cool.
In a saucepan, whisk together condensed coconut milk, pineapple juice, and cornstarch. Cook over medium heat until thickened.
Spoon the coconut mixture into the cooled crusts. Chill for 2 hours.
Top with pineapple jam, fresh pineapple, and toasted coconut before serving.
