Instructions

Step 1
Pour a cup of bone broth into a large soup potand heat to medium-high until broth begins to simmer.
Step 2
Boil the sweet potato in the broth until tender.
Step 3
Crack in the eggs. Bring to a swift boil, then cover tightly and let bubble for maybe just a minute longer.
Step 4
Turn off the heat and let eggs continue to cook in the hot liquid, for maybe 3 minutes.
Step 5
Check periodically until eggs are done to your liking. Yolks can be runny or solid, depending on your preference.
Step 6
Season with salt and pepper. Stir through the baby spinach. Serve immediately.
