Instructions
Step 1
In a large pot, melt margarine with the onions
Step 2
Add potatoes, and stir
Step 3
Cover the potatoes and onions with water, about a good 3"
Step 4
Add salt (1 tbsp?) and pepper (1/2 tbsp?)

Bring to a boil and simmer so still boiling, but not hard!
Step 6
Cook until potatoes are tender, about 1 hour
Step 7
Remove from heat (let cool if you have the time)
Step 8
Scoop into blender and blend until smooth in batches
Step 9
Note: If it's still hot, only fill about half of the blender

On the last batch, add in the cheese and sour cream

Return all of the mixture to your pot and heat slowly

DO NOT BOIL, THE CHEESE WILL CURDLE

Add salt and pepper if needed. If too thick, add more water
