Instructions
Step 1
Place the washed and unpeeled mini potatoes in a pot and cover them with water or chicken broth.

Step 2
Bring the water or broth to a boil, then reduce the heat to medium-low and simmer the potatoes for about 7-10 minutes, or until they are fork tender.
Step 3
Drain the potatoes and set them aside.
Step 4
In a large skillet, melt butter over medium low heat.

Step 5
Add minced garlic to the melted butter and sauté for about 30 seconds until fragrant, being careful not to burn it.

Step 6
Add soy sauce, honey, brown sugar and chili oil. You can also add in a splash of apple cider vinegar (or any type of vinegar) for some acidity.

Step 7
Turn the heat up to medium and bring the sauce to a simmer, stirring constantly.
Step 8
Allow the sauce to simmer for 2-3 minutes, or until it thickens slightly.
Step 9
Add the cooked baby potatoes back into the sauce and coat them well in the sauce.
Step 10
Saute the potatoes in the sauce for an additional 2-3 minutes.
Step 11
Optionally, garnish with sesame seeds and chopped green onions for added flavor and presentation.
Step 12
Serve and enjoy!
