Instructions
Step 1
- Preheat oven to 350F
Step 2
- Peel wash and cut 8 medium white potatoes and put in pot with water to cover
Step 3
Bring the water to a boil over high heat, then reduce the heat to medium and gently boil for 15 to 20 minutes, or until the potatoes are fork-tender.

- Once potatoes are boiling, put layer of vegetable oil, stove on high until oil is hot

- cut chicken breast open to butterfly, put Swiss cheese slice and pesto inside, fold over and wrap with prosciutto

- Put into pan and brown on both sides

- When done put on baking sheet with parchment paper, put in oven for 20 minutes

When potatoes timer is done, drain and return to the pot. Begin to mash the potatoes with a potato masher
Step 9
- Chop primini mushroom, pan full amount, put in dash of salt, 1 tbsp of flour and mix
Step 10
- Add in chicken broth to almost submerge mushrooms, add sprinkles of pesto around pan
Step 11
- Once mushrooms are half cooked, turn down to medium and wait for chicken to finish
Step 12
Once chicken is finished, start plating (use mashed potatoes to surround plate, put chicken and mushrooms in middle)
