Miso Roasted Cauliflower Dip

Did you know that you can turn roasted cauliflower into a dip? And a mighty fine one of that. It’s lush, and creamy and gives hummus a run for its money.

Instructions
Step 1
Preheat oven to 220°C and line a baking tray.
Step 2
To a bowl, add the cauliflower, olive oil and a pinch of salt and pepper. Toss to combine and spread on the baking tray.
Step 3
Bake in the oven for 25 to 30 minutes, or until tender and charred around the edges. Remove from the oven.
Step 4
To a food processor add the roasted cauliflower, butter beans, garlic, tahini, soy milk, miso paste, tamari, lemon juice and smoked paprika. Process until smooth, adding a dash more soy milk if needed.
Step 5
Serve the dip in a bowl or spread on a plate and optionally garnish with pesto, olive oil, sesame seeds and fresh herbs. Enjoy!
