Instructions

Step 1
1. Soak the beans in a large bowl of cold water for 24 hours with 1tsp bicarbonate - or just used pre-cooked!
Step 2
2. Drain, rinse well, then simmer until tender (45mins +). Strain, reserving the bean liquor.
Step 3
3. Chop the garlic bulb in half, season with salt + pepper then a drizzle of olive oil. Wrap in foil & roast at 180 for 45 minutes.
Step 4
4. Pulse the beans with 100ml of the bean liquor until a paste forms.
Step 5
5. Add the tahini, roasted garlic, nooch, artichokes (reserve a few for garnish) & lemon juice then blitz until combined.
Step 6
6. Stream in the olive oil while pulsing, then add 2/3 ice cubes for a smooth, fluffy & creamy texture.
Step 7
7. Top with leftover artichokes, scatter with parsley & paprika. Serve with dipper of choice & enjoy!
