You can substitute 60 g of semya (seviyan or vermicelli) for the basmati rice to make a really fantastic Semya Payasam... Don't wash or boil the vermicelli, just roast it in the remaining ghee after the raisins and the cashews and continue with the remaining instructions.

Instructions
Step 1
Wash rice and drain.
Step 2
Steep the saffron in a little warm milk.
Step 3
Fry cashew in ghee on low flame till golden brown. Remove. In the remaining ghee, fry the rice till light brown.
Step 4
Add the milk and bring to boil. Stir in sugar. Simmer till milk thickens, stirring constantly. It may take 15-20 minutes to get the desired consistency, which should coat the back of the ladle.
Step 5
Switch off the stove and add raisins and cashew. Add in the saffron-steeped milk and cardamom powder and mix well. Serve hot or cold.
