Instructions

Step 1
Crush the seviyan/vermicelli by hand and add to a pan with desi ghee. Toast for few minutes until it changes colour (I use the u shaped fine vermicelli packet)
Step 2
Put boiling water from kettle in the pan (enough to cover the seviyan properly), add sugar and green cardamom. Be careful when adding the water as you are mixing boiling water with hot ghee, turn stove off if needed and pour slowly
Step 3
Mix and leave for 5mins so it keeps bubbling and becomes thicker.
Step 4
Add chopped almonds, mix and leave for 3mins. Turn stove off then leave it to cool
Step 5
Once it is fully cooled down, break apart the seviyan by hand so theres no clumps (Tip: take out the green cardamom during this step so nobody has to bite into it lol)
Step 6
Serve it warm with either vanilla icecream or on its own (I top mine with more chopped almonds and edible silver leaf)
