Step 1
Oven 350. Toast almonds on a sheet pan until golden and fragrant, about 5 min.
Step 2
Place rice in a bowl. Rinse and drain several times until water runs clear. Drain in fine mesh strainer and set aside over bowl.

Bring 2¼ cups water to boil in small saucepan. Add salt and pepper to water and cover.
Step 4
Melt butter in lg saucepan over med heat. Add onion and cook until softened. Add rice, stir, and cook until edges of grains turn translucent. Stir in hot, seasoned water. Return to a boil then simmer, covered, until all liquid is absorbed, 16-18 min. Off heat, place folded dish towel under the lid and let stand 10 min. Fluff with fork and serve.
