Instructions
Step 1
Fry the edible gum in ghee and grind it once cooled
Step 2
Whizz almonds, pistachio, and cashew in a grinder jar to crush them.
Step 3
Now, take the same pan, and add rest of the ghee in it. Allow ghee to heat and then add wheat flour in it.
Step 4
Reduce the heat and roast the wheat flour 'til a nutty aroma starts to come and it changes its color to golden brown.
Step 5
Keep continuously stirring the wheat flour to avoid over-cooking.
Step 6
When the flour is well roasted, add coarsely powdered edible gum, crushed almonds, pistachio, cashew, and melon seeds in it.
Step 7
After the seeds add a teaspoon ofcardamom powder and 2 tablespoons of ginger powder in it.
Step 8
Mix all the ingredients well and allow the mixture to cool down.
Step 9
When the mixture is slightly cool add castor sugar in it.
Step 10
Mix them well and then take small portions and shape each portion in a round ball.
Step 11
Make these balls/ladoo while it is warm and serve it with warm milk this winter.

Step 12
Do not over roast the wheat flour otherwise, it will burn and taste bitter.
Step 13
I have deep-fried edible gum in ghee before adding it in the mixture. Some people simply grind it without deep frying and use it. I feel deep frying gives a crunchy texture and we have not used extra ghee.
Step 14
Cool down the flour mixture and then add sugar in it. If you mix sugar while the mixture is warm the ladoos will not hold shape and break easily.
