Instructions

Step 1
Toast the chilies, peppercorns, coriander, cumin, and fennel over medium high heat until lightly browned and fragrant, a few minutes. Add the turmeric, ginger, and fenugreek in the last minute of toasting.
Step 2
Cool, then grind to a fine powder. Add the cayenne to taste.
Step 3
Store in a tightly covered opaque container for up to several months.
