Beat cream cheese, sour cream, lemon juice, lemon zest, vanilla extract and sugar together in a bowl until evenly incorporated. Add eggs, one at a time, beating well after each one.

Pour a 1/2 cup of cheesecake mixture into each muffin mold. Air fry at 300 degrees for 20-22min. If you notice the cheesecake browning too quickly on top, tent it with aluminum foil halfway through baking. When cheesecake is done, let cool and refrigerate overnight. (3-4 hours minimum)
