Air Fryer Mini Lemon Meringue Cheesecakes

Let me introduce you to the best thing you've NEVER had in the air fryer. You have to try these air fryer mini cheesecakes! The recipe makes 12 good-sized cheesecakes that are great for sharing with family or friends. Let me know what you guys think!

3 x 8 ouncecream cheese
packages, softened

1 cupgranulated sugar

1 cupsour cream

4eggs
large

¼ cuplemon juice
fresh

1 tsplemon zest

1 tspvanilla extract

Instructions
Step 1

Preheat air fryer to 300 degrees. Mix graham cracker crumbs and melted butter together in a bowl until evenly combined.




Step 2

Press into the bottom of large silicone muffin molds. Air fry crust for 5min. (link in my bio for the ones I use)

Step 3

Beat cream cheese, sour cream, lemon juice, lemon zest, vanilla extract and sugar together in a bowl until evenly incorporated. Add eggs, one at a time, beating well after each one.








Step 4

Pour a 1/2 cup of cheesecake mixture into each muffin mold. Air fry at 300 degrees for 20-22min. If you notice the cheesecake browning too quickly on top, tent it with aluminum foil halfway through baking. When cheesecake is done, let cool and refrigerate overnight. (3-4 hours minimum)

Step 5

Spread 1 tbsp of lemon curd over each mini cheesecake.

Step 6

In a mixing bowl, beat egg whites in a bowl until soft peaks form. Beat in sugar and cream or tartar until mixture has formed stiff peaks.



Step 7

Mound the mixture over mini cheesecakes. Use a kitchen torch to brown meringue and place in the refrigerator for about an hour before serving. Enjoy!
