Da best cheesecake

In all honesty this beats any store bought expensive cheesecake. Much cheaper and easier to make.

Instructions

Step 1
Take your cream cheese, sour cream, and eggs and place them on your counter to get to room temperature (about 20 min). Preheat oven to 350F a while
Step 2
Make the crust: mash enough graham crackers until you have a fine dust, about 1 1/2 cups worth. Add in 1 cup of sugar and mix, then add in about 5 tbsp of melted butter.
Step 3
Get a springform pan and grease the sides with butter or oil (very thin coat). Add in the graham cracker crust and spread it out, making sure to get up the sides.
Step 4
Bake the crust in the oven for about 8 minutes, take it out and let cool.
Step 5
Make the filling: cream together the cream cheese and 1 1/2 cups of sugar until we’ll mixed. Add in the sour cream and slowly mix in eggs one at a time. Add vanilla extract. This is much easier done at room temp & you won’t have lumps.

Bake the cake: get a shallow pan or baking dish and fill it with boiling water. Add the filling into the springform pan and even it out and then place it on the top rack of the oven. Place your dish with the water on a rack below. Bake for 90 minutes, after let it cool on the stovetop for another 30 minutes. Slice and serve, but it is much much much better after an overnight stint in the fridge.
