Instructions

Step 1
In a mortar and pestle, pound together chillies, garlic, shallots, cilantro, and palm sugar until it becomes a paste.
Step 2
Add lime juice and fish sauce and season to taste with fish sauce, palm sugar, and lime juice if necessary.
